Coconut Cream Pie recipe

Ingredients:

3 medium eggs, separated.
2 cups of milk.
¾ cup of coconut.
¾ cup of sugar.
3 tablespoons of cornstarch.
1 teaspoon of vanilla.
¼ stick of butter.
Dash of salt.
Baked pie shell.
Meringue.
Shredded coconut.

Directions:

Mix together the sugar, cornstarch and salt; then add enough milk so a paste is formed.

Add the egg yolks to the paste and mix thoroughly.

Add the remaining milk.

Cook in a double boiler until the mixture is thick.

Add the coconut, vanilla and butter.

Pour into a pie shell and cover with meringue.

Sprinkle with shredded coconut.

Bake at 375°F (190°C) until browned.
